I am always looking for fast, healthy weeknight meals that everyone actually likes to eat! We love salmon, and this is truly the easiest dinner we have in our weekly rotation. Pair with rice, quinoa (or anything your kids like) and a mixed salad and you have a dinner done with less than 10 minutes of prep work! 🙂
* 4 – 6 oz Salmon Fillets
* ½ cup Dijon Mustard
* ½ cup Brown Sugar
* Salt & Pepper
Step 1. Heat the oven to 400 degrees.
Step 2. Mix the mustard and brown sugar together. Add more to taste. Salt and pepper the fillets.
Step 3. Place the fillets skin-side down on a lightly oiled, foil-lined baking sheet. Slather the tops of the fillets with the mustard and brown sugar glaze. Put the baking sheet in the top half of your oven and cook for 10-12 minutes.
